Celebrating International Nutella Day with this Eggless Nutella Pudding Recipe!

If there is someone to be held accountable for the popularity of hazelnut brittles, it has to be Nutella! We all love Nutella, don’t we? The smooth and rich chocolate hazelnut butter that the world has accepted to be the greatest spread of all. And look, now we got Nutella shakes, Nutella cakes, Nutella everything! And the popularity isn’t hyped, after all, a spoonful (okay, more) is what you need to make something like a simple slice of bread taste like heaven!

Infact, one of the hardcore lovers of Nutella, Sara Rosso, decided to dedicate a day to our favourite nut butter! So to celebrate this remarkable day, I thought, why not to share the quickest, easiest Nutella Pudding recipe you will come across! It is not going to take you hours in the kitchen but the taste is going to blow your mind off!

Here’s what you need:
  • 5 tbsp of Nutella
  • 2 cups of milk
  • 2 tsp (or more, depending on your taste) of sugar
  • 1 tbsp of cocoa powder
  • 4 tbsp of corn flour
  • 1 tsp of vanilla extract
  • Roasted nuts – to garnish
How to make it:
  • Mix the cornflour in ½ a cup of cold milk till it is all well combined.
  • Now, take a thick bottomed pan and pour in the milk. To the milk, add in the powdered sugar.
  • Follow up with some cocoa powder and keep stirring it with the help of a whisk to make sure there are no lumps.
  • Cook it till you get a simmer in the milk. Now slowly add in the cornflour – milk mixture. Make sure you add in very slowly while stirring all the while on low heat.
  • Keep on cooking and whisking this mixture for 2 to 3 minutes or till it is all combined well into a smooth, thick batter, similar to the consistency you see in the images below.
  • Once you think the consistency is appropriate, take the pan off the heat and add in the Nutella. Mix well.
  • Finally, add in the vanilla extract.
  • Once it has cooled down completely, this is the texture you will see in the pudding. Smooth, glossy, thick and sinfully rich!
  • Pour it into your serving glasses or bowls, garnish with some roasted nuts! Or if you’re feeling extra fancy, strawberries and chocolate are a match made in heaven, so top it off with some strawberries! I have arranged the pudding with layers of nuts and strawberries in between, you can garnish it however you want.
