One Pot Pasta Dinner

This one pot pasta dinner is for those days when you don’t want to do tons of preparations or spend long hours in the kitchen for your dinner and ending up with a load of dishes to clean.

Here’s what you need:
  • 250 gm of pasta
  • 600 ml of milk (750 ml if using flour)
  • 1 to 2 tbsp of garlic (crushed or sliced)
  • 4 tbsp of olive oil
  • 3 tbsp of butter
  • Vegetables of your choice. (I used olives, mushrooms, capsicum, and corn)
  • Seasonings: Salt, Dried Oregano, Black Pepper, Chilli Flakes
  • Optional: 2 tbsp of flour, 100 ml of cream or malai, 50 gm of cheese (add more if you wish to)

Notes:

  • Remember that the quantity of water used to boil the pasta would greatly depend on the type of pasta you are using so you may have to increase or decrease the quantity.
  • You can mix water and milk also for a lighter sauce.
How to make it:
  • Heat the olive oil and butter in a pan.
  • Once the butter has sizzled and melted, add in the flour (if you are using it). You can use whole wheat flour. The flour will just help to make your pasta sauce a little thicker.
  • Put in the garlic and let it cook for another 30 to 40 seconds.
  • Add in whatever vegetables you are using and season them with salt & pepper. Cover and cook for 5 to 7 minutes.
  • Once cooked, add in the olives, milk, cheese along with rest of the seasonings.
  • Mix all of the above and add in the cream.
  • Adjust the seasonings. Cover and cook for 8 to 10 minutes. Note: The cooking time will greatly depend on the type and quantity of the pasta you are using. It’s a good idea to keep checking and stirring it up every few minutes.
  • Your one pot pasta dinner is ready to serve! You can have it as it is or serve it with some toasted garlic bread.
