Gluten free Chocolate Cake

If there is one comfort food that everyone loves, it has to be a rich chocolate cake. Serve it with ice cream, layer it with whipped cream, whatever you do, it proves to be the perfect base for any flavor combination.

This chocolate cake recipe is dedicated to all those who are allergic to gluten or have adapted themselves to the gluten free lifestyle. But even if you aren’t one of them, you will still fall in love with this flourless chocolate cake recipe and once you try it, you will come back to baking it again and again.

Here’s what you need:
  • 200 gm of chocolate
  • 80 gm of butter
  • 80 gm of brown sugar
  • 4 eggs – seperated
  • Vanilla essence – optional (helps to mask the smell of eggs)
How to make it:
  • Firstly, preheat your oven to 180º C and since this cake has no flour, it tends to get a little sticky, so make sure you grease and line your baking tin well.
  • In a bowl add in the butter and chocolate and melt them. You can do so by using the double boiler method or by melting them at intervals in the microwave. Make sure to not overheat this mixture. Mix the two together till you get a shiny mixture.
  • Leave this mixture to cool down slightly while you move onto the eggs. Make sure that the eggs are at room temperature. Separate the egg yolks from the whites.
  • Now onto the egg whites, add in a pinch of salt to the whites, and start whisking them till they become foamy.
  • Afterward, add sugar in small batches and keep whisking till sugar gets dissolved and the egg whites form stiff peaks. I have used brown sugar here but you can use regular white sugar as well.
  • Now take out your egg yolks and mix them well with the chocolate & butter mixture till they are combined well.
  • Add in these whipped egg whites to the chocolate and yolk mixture, little at a time, and mix gently till you get a uniform batter.
  • The cake batter is ready! Pour in the batter and bake your cake at 180º C for about 30 to 35 minutes.
  • Once it has baked, let it cool down completely and once cooled down, release it from everyone by running a sharp knife on its edges.
  • Your delicious, flourless gluten free cake is ready!
  • Time to make it look pretty! You can serve it as it is or just like me, powder with cocoa powder and/or serve with a dollop of whipped cream and fresh strawberries!
