Garlic and Herb Muffins

If you like garlic bread, or the lingering fragrance of garlic, in particular, you are going to fall in love with these garlic herb muffins! Garlic, cheese, and herbs are definitely one of the most amazing flavor trios and these muffins are perfect to be saved for everything: a picnic basket, the dinner table, a traveling munchie, as a breakfast item, or just for lazy snacking. Bonus point: this is a no yeast, no egg recipe!

Here’s what you need:

This recipe gives me exactly 12 muffins.

  • 2 cups of flour
  • 1 tsp of baking powder
  • ½ tsp of baking soda
  • 1 cup of yogurt
  • ¾ cup of oil
  • 1 to 2 tsp of fresh herbs if available or else dried mixed herbs – more to garnish
  • ¾ cup of cheese (whichever type you have available)
  • Black Pepper to taste
  • Garlic Herb Butter (click to read) to grease the muffin tins (as well as to brush over the baked muffins to add extra flavor)

To make the Garlic Herb Butter you need:

  • ½ cup of melted butter
  • 1 tbsp of crushed garlic
  • 1 tbsp of parsley or coriander
How to make it:
  • Preheat your oven to about 180º C.
  • To prepare the muffin batter, take a large bowl and add in the flour, baking powder, and baking soda along with the dried herbs and give it a good mix.
  • Next, you need to add the yogurt and oil and combine well into a uniform batter.
  • Add in the cheese and mix again. Since I used processed cheese (which is quite salty), I did not add any salt to my muffins batter.
  • You need to make sure that the batter is pretty thin. If you need, add a bit more of the yogurt.
  • Now you need to grease your muffin tins with some garlic herb butter (click to read).
  • Even if you don’t have this butter readily available, you can make it in under 5 minutes, it will help enhance the taste of your muffins. Just melt the butter and add in the garlic and parsley (or coriander or both) and mix well.
  • Pour in the batter. Make sure you only fill up the batter up to ¾th of the muffin cavities.
  • Bake at 180º C for about 20 minutes.
  • Your delicious garlic and herb muffins are ready! Add some more flavour by brushing more of the garlic herb butter, cheese and seasonings on the top.
