
I absolutely love sweet corns! Especially the sweet, juicy, and tender ones that are in season right now. I love it steamed, or boiled, or in a soup, in a filling, or even by itself, what not!

Today as I made this grilled corn sandwich for my breakfast, I thought why not to share this recipe with you guys. I have also posted some more amazing sandwich recipes for you guys, such as this Chilli Cheese Toast recipe as well as the recipe to make pizza on a bread!
Here’s what you need:

- 2 cups of boiled sweet corn
- ¾ cup of finely diced onion
- ¾ cup of finely diced capsicum
- ⅓ cup of mayonnaise
- ⅓ cup of cheese
- Salt and Pepper to taste
- Dried mixed herbs to taste
Optional:
- Grated carrot
- Finely diced broccoli
- Fresh Herbs
How to make it:
- In a big mixing bowl, add in the boiled sweet corn. You can also crush it on mash it a little bit if you want to. I kept them as it is i.e., whole kernels.
- Next, add in all the other vegetables you are using and along with the cheese and give it all a good mix. You can also use paneer with cheese or instead of cheese if you want to.

- Now add in the mayonnaise, which will act as our binding agent for the filling. If you prefer, you can replace it with some heavy cream.


- Now is the time to season this filling! I have used a very little amount of salt here because the cheese that I used was already quite salty, and therefore you should also be considerate about the amount of salt you want to use.
- Along with the salt, I have also used here some black pepper and dried mixed herbs. As I have explained above, you can also add some fresh herbs.

Making the sandwich:
- Mix it all up and our filling is ready!

- Now onto making the sandwich, for which you need some bread slices along with some melted butter. You can use any type of bread you like, I have used white bread here.

- Butter up the slices as generously or as little as you want to. You can also apply some butter on the insides of the sandwich.
- Next, lather up a generous amount of fillings onto the buttered bread slice and cover with another slice of bread.

- Along with applying a generous amount of butter onto the outside of the sandwiches, I also applied some of it on the plates of the grilling pan to make sure the sandwich does not stick to it.
- Place the sandwich into your sandwich maker and cover it and cook for 3 to 5 minutes. The duration can vary depending on the type of sandwich maker you’re using. Although, it’s a good idea to keep checking in between.
- Once both the sides of your sandwich are golden (as you can see in the images below), take it out on a plate and serve with any dip you prefer. You can use ketchup, chutney, or whatever you want.
- Your grilled corn sandwich is ready!
