“Just Because You Can’t Bake Does Not Mean You Have To Go Without A Cheesecake.”
Absolutely!! An amazing Cheesecake is not necessarily about complicated baking with exotic ingredients!! And that is why I have this super simple Oreo No Bake Cheesecake Recipe, which is one of my top favorites to take to a party!!This cheesecake is simply about whipping up and mixing a few ingredients together and just a bit of patience after that while your fridge does the rest of the work of setting it firm.
What You Will Need:
Oreos – 12 for the base and 14 more
Melted Butter – 3 tbsp
Creamcheese – 250 gms
Icing Sugar – 4 tbsp
Vanilla – 2 tsp
White Chocolate (chopped) – 200 gms
Whipping Cream – 200 mls
Fresh Lemon Zest – 1 tbsp (optional)
How To Make It:
Crumble 10 Oreos finely. Add in the melted butter and mix till you get a mixture that looks like mud. Line the base of your springform tin with this Oreo and butter mixture. Pop it in the fridge and let it chill while you prepare the cheesecake mixture.
Beat 250 gms of Creamcheese (room temp) with Vanilla with a beater till it is smooth and creamy. Add 4 tbsp of powdered sugar and beat again to mix.Add the lemon zest and fold it in.
Note: Lemon zest is not necessary to use here. I use it because citrus is my favorite almost always anywhere. And also it kind of cuts through the sweetness of the Oreos in this recipe. Feel free to omit it completely or to use it in a quantity you prefer!! Melt the chopped white chocolate. Let it cool and add to the creamcheese mixture and beat to incorporate well.
Whip 250 mls of whipping cream to soft or stiff peaks. I prefer stiff peaks but even soft peaks give a good result.Mix the Creamcheese and whipped cream.
Important: Add a spoonful of whipped cream and gently mix it into the creamcheese mixture thoroughly first.
Then add the rest of the whipped cream in 2-3 batches mixing it gently and uniformly. This will give a light and creamy consistency to your cheesecake.If you observe the consistency of the batter in the below picture, you can make out how creamy the cheesecake batter is!!!
Break some (4-5) Oreo cookies into small pieces and fold them into this mixture. Now take the springform pan that you had lined with the Oreo crumbs base from the fridge. Scoop this batter over the Oreo layer in your tin evenly and smooth the top. Now arrange whole Oreo cookies on the top of the cream in any manner you like!!I also has a few Flute glasses so I replicated the cheesecake layers in these glasses, Oreo crumb topped by the cheesecake batter and garnished with half an Oreo cookie. Put it all back into the fridge ….
…and now begins the Game Of Patience. And remember my friends, the more patient you are, the better the result that awaits you. So you chill out while your cheesecake chills and sets in the fridge.
There is nothing like letting it sit calm and undisturbed in the fridge overnight. Trust me. I make this cheesecake a day before I need it and leave it in the fridge till I need it the next day. Always.
