My Favorite Coconut Cupcakes

Coconut Cupcakes are really one of my top favorites. The best part is that they are so super simple to put together – it’s a one-bowl wonder! And you won’t believe how soft and light these cupcakes turn out. They actually melt in your mouth!

Now you can use this recipe to make cupcakes or a cake. It gives you about 14-16 good-sized cupcakes or a 10 inch round cake.

What you will need:
  • 250 gm of flour
  • ½ tsp of baking powder
  • 100 gm of desiccated coconut
  • 50 gm of ground almonds
  • 150 gm of butter
  • 1 tsp of vanilla
  • 150 ml of milk
  • 2 eggs
  • 200 gm of sugar
How To Make It:
  • Preheat the oven to 180 C.
  • Grease and line cupcake tray with paper liners. (If you’re making a cake, use a 10-inch cake tin)
  • In a large bowl, mix together sifted flour, baking powder, ground almond, coconut, and sugar.
  • Add in the butter, vanilla, milk, and eggs and mix with a whisk till you get a smooth batter.
  • Finally, pour the batter into the cupcake liners and bake for about 15 to 20 minutes. If you’re making a cake, bake it for about 35-45 minutes.

Knowing you and having experienced the magic you create, must say that you are just amazing and the best baker i have ever met. My personal favourite being coconut cup cakes.
