
Coconut Cupcakes are really one of my top favorites. The best part is that they are so super simple to put together – it’s a one-bowl wonder! And you won’t believe how soft and light these cupcakes turn out. They actually melt in your mouth!

Now you can use this recipe to make cupcakes or a cake. It gives you about 14-16 good-sized cupcakes or a 10 inch round cake.
What you will need:
- 250 gm of flour
- ½ tsp of baking powder
- 100 gm of desiccated coconut
- 50 gm of ground almonds
- 150 gm of butter
- 1 tsp of vanilla
- 150 ml of milk
- 2 eggs
- 200 gm of sugar

How To Make It:
- Preheat the oven to 180 C.
- Grease and line cupcake tray with paper liners. (If you’re making a cake, use a 10-inch cake tin)
- In a large bowl, mix together sifted flour, baking powder, ground almond, coconut, and sugar.


- Add in the butter, vanilla, milk, and eggs and mix with a whisk till you get a smooth batter.


- Finally, pour the batter into the cupcake liners and bake for about 15 to 20 minutes. If you’re making a cake, bake it for about 35-45 minutes.
