2 Instant Sorbet Recipes

Summer is here and we are surrounded by all the fresh summer fruits: Mangoes, Watermelon, Musk Melon, Pineapples and what not! And to survive the scorching Indian heat, we all need our share of something cold to eat all the time! And my heart calls for nothing else but some homemade sorbet! It’s so easy to make you’ll almost forget all of the other frozen desserts and it is absolutely made with fresh fruits so you don’t even have to worry about not getting all the summer fruit goodness.

I’ve made two variations of this instant sorbet recipe: Strawberry and Pineapple! The best thing is that you can make them only with only two ingredients and under 5 minutes! I have used here frozen fruits instead of fresh fruits and that is why we will be able to make it instantly.

Here’s what you need:

For the pineapple sorbet:
  • 2 cups of frozen pineapple chunks
  • Juice of 1 lemon
  • 4 tbsp of condensed milk
For the strawberry sorbet:
  • 2 cups of frozen strawberries
  • 4 tbsp of condensed milk

How to make it:
Pineapple Sorbet
  • The first step is to chop your frozen pineapples into small pieces. If you think it is getting difficult to chop them because they are frozen, you can let the frozen pineapple lie around for about 10 minutes before you start chopping it. Letting the frozen fruits thaw for sometime will also help when we are churning them in the food processor.

  • Add these pineapple chunks into a food processor and start pulsing them. After a while, you might notice that the pieces are not churning at all, in which case you need to scatter them a bit with the help of a spoon.

  • Keep on pulsing till you get a snow-like consistency.
  • Then add in the condensed milk and churn it again till it reaches the perfect consistency!
  • Your Pineapple Sorbet is ready! Serve it right away! No need to freeze since we made it with frozen fruits! If you’d like, you can even add the juice of 1 lemon to increase its tartness.
Strawberry Sorbet
  • Add the slightly thawed frozen strawberries into a food processor and follow similar steps as we did with the pineapple sorbet.

  • Add the condensed milk, and churn into a sorbet! Serve immediately!
