This Veg Shepherd’s Pie recipe is a vegetarian-friendly, meatless version of the classic holiday dish. It’s a wonderful combination of savory vegetables cooked in a gravy topped with creamy, baked mashed potatoes. Nevertheless, the Vegetarian Shepherd’s Pie is filled up with all the veggie goodness and is still oh so delicious!

Here’s what you need:

For the mashed potatoes:

  • 6 boiled potatoes
  • ¾ to ½ cup of cream
  • ½ to 1⁄4 cup of butter
  • Salt & Pepper to taste

Note: Quantities used here are lesser than what is normally used for mashed potatoes. You can however choose to increase or reduce the quantities to your preference.

For the pie filling:

  • 150 gm of mushrooms
  • ¾ cup of ricotta or paneer
  • ½ cup of carrots
  • 1⁄4 cup of green beans
  • ½ cup of boiled peas
  • ½ cup of tomato paste or puree
  • Olive oil to sauté
  • One chopped onion
  • 1 bay leaf
  • 1 tsp of garlic
  • Salt & Red Paprika Powder to taste
  • Garam Masala (optional) to taste

Note: You can use any quantities of vegetables you want. The measurement stated above is as per what I used to make my recipe.

How to make it:

Making the mashed potatoes:

  • Start with grating the boiled potatoes which will make it easier for you to mix the other ingredients and mash them.
  • Add in the grated mashed potatoes, butter, cream & seasonings to a bowl and mix and mash them till you get them as smooth as possible.
  • Please note that the mixture shall be less gooey or creamier than the traditional mashed potatoes, this is again because of variation in the quantities.
  • Once done, cover it and keep it aside till you prepare the pie filling.

Making the pie filling:

  • To make the pie filling, now we are first going to take some olive oil in a pan to which we will first add the bayleaf and garlic.

  • After the bayleaf and garlic have roasted a bit, we are going to put in the onions and sauté them till caramelized.
  • Next, you can add in all the other vegetables and seasonings; cover the pan and let them cook for sometime.
  • Once all other vegetables have cooked you can add the paneer or ricotta cheese along with the tomato puree or tomato paste. Mix everything well and let it cook on an open flame for sometime.
  • Our pie filling is ready! You can taste it to adjust if necessary.

Assembling the pie:

  • Now, scoop this pie filling into an oven proof dish. Level it up nicely to have a smooth, even base for the mashed potatoes.
  • Finally, bring out the potatoes and layer them all over these potatoes evenly.
  • After which you can make a pattern using a fork or a spoon, or just anything you like. This step is completely optional; I did it because it is traditionally done.

  • Now, put it on the top shelf of a pre-heated oven at 220° C to broil for 10 to 15 minutes or till a crisp, golden layer forms on the top.
  • Cut it out and serve hot!

Ingredients

  • For the mashed potatoes
