Veg Lasagne is one recipe that everyone loves! It’s such an amazing dish to serve when guests come over and making it is only a matter of a few steps. It is full of cheesy, saucy flavors which have made it a world favorite.

So if you have ever tried out my mac and cheese recipe, you need to try this one too! You’d discover it is as comforting as a bowl of mac and cheese.

Here’s what you need:

Note: If you are using unboiled Lasagne sheets, you need slightly thinned down 2 cups of both Béchamel Sauce (creamy White Sauce) and Red Pasta Sauce. But if you have semi-boiled the Lasagne sheets, then you may use thick sauces.

How to make it:
  • Sauté the vegetables in olive oil. Cover and cook till done.
  • Add the seasonings and the Red tomato Pasta sauce (click to read) to these. Mix well and keep aside. Our lasagne filling and red sauce are done.
  • Mix the processed cheese and mozzarella. Keep ½ cup of mozzarella aside for sprinkling on top.
  • Now take an ovenproof bowl and let’s begin assembling our lasagne.
  • We will begin by layering the bechamél sauce (click to read) at the base of the dish.
  • Then, we will arrange a layer of lasagne sheets over this.
  • This is followed by a layer of our veggies tossed in red sauce.
  • Now we will sprinkle some of our cheese mixture over it.
  • Repeat these layers till you reach the top.
  • You can use any sauce as the last layer. I used the red one.
  • Sprinkle some more of the reserved mozzarella all over the top as generously as you want.
  • Bake this at 200ºC for about 20 minutes and then broil it till the cheese on top becomes a beautiful bubbling golden!
  • Your lasagna is ready! Serve hot with your favourite bread or garlic bread or dinner rolls or just like that.

Ingredients

  • 250 gms of lasagne sheets

  • 1½ to 2 cups of Béchamel sauce or creamy white sauce (recipe on www.anjalisbakeaffair.com)

  • 1½ to 2 cups of pasta Sauce (recipe on www.anjalisbakeaffair.com)

  • Diced or chopped vegetables of your choice. I used ¾ cup of baby corns, ½ cup of onion, and ½ cup of capsicum

  • Seasonings, to taste: Salt, Black Pepper, Oregano, Pasta Seasonings

  • ½ cup of processed or any other cheese

  • ¾ to 1 cup of Mozarella
