We all love tarts don’t we? Especially when combined with our favourite berry: strawberry, it becomes a perfect combination. The crust to the tart is made with an eggless tart dough, the recipe for which is on my website and the filling is a no cook, super easy, toss and bake one! You need to try this one.


Here’s what you need:
For the Pie Dough:
- 3 cups of flour
- 2 tbsp of flour
- 220 gm of butter
- 8 to 10 tbsp of ice cold water
- 1 tsp of salt
For the Pie Filling:

- 400 gm of diced strawberries (fresh or frozen)
- 50 gm of sugar
- 1 tsp of vanilla
- 30 gm of cornflour or corn starch
- 1 tsp of lemon juice
- 1 tsp of lemon zest
To decorate:
- Granulated sugar
- Fresh strawberries
- Mint sprig
To serve:
- Whipped cream
How to make it:

- To make tart pie filling, add the diced strawberries into a big bowl, followed by the sugar and the cornflour give a good mix till all of these are well combined.






- Next, squeeze in 1 tsp of lemon juice along with the vanilla. Your tart filling is ready! Leave it to rest for 5 to 10 minutes.



To proceed:
- Preheat your oven to 200º C.
- Grease your baking tray with some butter so that the tart can come off easily later.

- Roll off half the dough into a 6 to 8 inch circle (depending on the size of your baking dish) with the width of ¾ of an inch. Place it into the baking dish.


- Add the filling into the dough lined baking dish.



- You can use the other half of the dough to cut out shapes or stripes to place on top of the tart.
- Now we are going to brush some egg wash on the tart dough. To make the egg wash, simply add 2 tbsp of water to an egg.


- Bake your tart at 180º C for 1 hour and 10 minutes.

- After 30 minutes into the baking process, cover the top of the tart with an aluminium foil to prevent it from burning.

- Your strawberry tart is ready! Serve cooled.
