Spiced Carrot Cake

Some things never go out of trend, and one of them is this incredibly moist, crumbly carrot cake recipe made with grated carrots. The spices such as cinnamon, cloves, ginger, and nutmeg only add up to its warm and cozy flavor, the kind of flavor you crave in peak winter days. Add some cream cheese frosting (click to read), and you will have this traditional, moist, creamy carrot cake.

Here’s what you need:
  • 200 gm of flour
  • 1½ tsp of cinnamon
  • ½ tsp of ground cloves
  • ¾ tsp of ground ginger
  • ½ tsp of ground nutmeg
  • 1 tsp of baking soda
  • 100 ml of oil
  • 2 eggs
  • 175 gm of brown sugar
  • ½ cup of milk
  • 250 gm of grated carrot
  • ½ to 1 cup of walnuts or pecans
How to make it:
  • Firstly, preheat your oven to 170º C.
  • In a big bowl sift in the flour along with the baking soda.
  • Add in the spices, along with the nuts, and mix well with the help of a spoon.
  • Make a well in the center and the oil, sugar, and eggs.
  • Mix gradually with a spoon till the batter is uniformly combined and has a smooth texture.
  • Finally, add in the grated carrots along with the milk and mix well.
  • Pour the batter into a lined baking tin and bake at 170º C for approx 1 hour and 10 minutes.
  • Let it cool down slightly before you turn it out.
  • Afterward, run a sharp knife on the edges of the baking tin to ensure that it’s not stuck anywhere.
  • Your spiced carrot cake is ready! Even though it is delicious enough to be eaten on its own, a little cream cheese frosting won’t hurt (and will make it look even prettier!).
Decorating your cake:
  • To learn how to make the cream cheese frosting, click here. Adding this frosting to a carrot cake not only makes it even more delicious, it is how traditionally a carrot cake is served.
  • To decorate the cake, I just added a thick layer of the cream cheese frosting on the top along with a few more walnuts.
  • Afterward, I added a few raisins and dried cherries and finally, sifted some cinnamon powder over it.
  • Look at how beautiful this spiced carrot cake looks from the inside. Crumbly, moist, warm cake full of spices and texture.
