Pancakes with caramelized cinnamon apples

These pancakes with caramelized cinnamon apples is the best breakfast idea of all for various reasons; first, whatever you need for this recipe is probably already there either in your kitchen or your fridge right now! secondly, the aroma of caramelized apples and cinnamon when combined with the softness of the pancakes gives an unmatched homely feeling.

This recipe in particular is very close to my heart because my daughter loves to have this as her breakfast on any weekend morning or on a holiday.

I have used apples in this recipe, but if at all you don’t have apples available, you can use bananas, peaches, or just anything you fancy. Simply serve them with a bit of caramel sauce (click to read) or chocolate syrup.

Here’s what you need:

To make the pancake batter:

  • 1 cup of flour (all purpose, whole-wheat or any other flour you prefer)
  • 1 cup of milk
  • 2 tbsp of melted butter
  • 2 to 3 tbsp of powdered sugar
  • 1 to 2 tsp of cinnamon powder
  • 1 egg (optional)
  • Vanilla essence (optional)

For caramelized cinnamon apples:

  • 2 apples
  • 5 tbsp of brown sugar
  • 3 tbsp of butter (salted or unsalted)
  • 1 to 2 tsp of cinnamon powder
How to make it:
  • First of all, we need to add the egg, milk, and butter into a bowl and mix them with a help of a whisk, spoon, or fork till combined.
  • Next, we need to add all of the other ingredients and combine into a thick batter.
  • Let the pancake batter rest for about 5 to 10 minutes. In the meantime, we can caramelize our apples.
  • We need to first peel and slice our apples into thin slices.
  • Heat the butter in a pan and sprinkle the brown sugar all over it.
  • Let the sugar start melting and then place the apple slices and let them cook for about 3 to 4 minutes on each side. You can add cinnamon at any point.
  • When you see your apples turning into this beautiful golden colour it means your apples are caramelized.
  • There are your caramelized cinnamon apples ready!
  • Now it’s time to make our pancakes for which you need to spread some butter in your pan and add a ladle full of pancake batter. Don’t spread the batter too much so that your pancakes remain thick.
  • Cook well on each side and your pancake is ready!
  • There are many ways in which you can serve your pancakes. One is to serve them with these caramelized apples, some caramel sauce (click to read the recipe), chocolate syrup, nutella, whipped cream, powdered sugar, the options are unlimited! (or just like me, all of them together!)
