Mint Chocolate Cookies

Mint and Chocolate is the most unique yet popular combinations of all time! And when they come together into these delicious mint chocolate cookies, a heavenly match of flavour is destined to be made!

To make these cookies, I have here used eggs in the recipe, you can make them completely eggless by replacing eggs with yogurt. I have also used chunks of dark chocolate instead of chocolate chips here. You can use whichever you like more.


Here’s what you need:
  • 1½ cup of flour
  • 1 cup of sugar
  • 100 gm of butter
  • 1 cup of mint leaves
  • 1 egg
  • Vanilla
  • 1 cup of choco chips or chopped chocolate
How to make it:
  • Firstly, we are going to prep our fresh mint leaves. For which, we will first cut the stems out and then wash them under running water and let them dry on a clean paper towel. Now, we are going to chop these leaves; you can keep them as coarse or as fine as you want to.
  • In a large bowl, add in the sugar along with the mint leaves. With the help of a whisk or a spoon, combine these both together so that the sugar is well infused with the flavors of the fresh mint leaves.
  • Now onto the cookie dough! For which you need to add the butter in another large bowl. Make sure that the butter is at room temperature.
  • Add in the mint infused sugar to the butter and beat them both well until they come together in a homogeneous mixture that has a fluffy, creamy consistency.
  • To this mixture add a whole egg. In case you don’t want to use egg, you can add 2 tbsp of yogurt. Mix it well into the batter.
  • Add the flour to this batter to form a complete cookie dough like texture and finally, now is the time to add our favourite ingredient: choco chips! I have used here chopped dark chocolate because I like the big chunks of chocolate over choco chips in my cookies. You can add the chocolate in any form you want to. Give the dough a final mix and our cookie dough is ready!
  • You can even add some vanilla extract into it if you want to.
  • Time to make the cookies! Scoop out cookie shapes out of the batter. You can make these in any shape you want. I have here used a ice-cream scooper to make my cookies pretty huge and the process mess-free.
  • Finally, bake these cookies 180º C for about 12 to 15 minutes or till they are golden. The baking time, however, largely depends on the size of your cookies, so it’s better to keep an eye on them.
