Gingerbread Cookies

Gingerbread Cookies are one of those recipes without which Christmas feels incomplete. Whether it is the gingerbread man or gingerbread house, these cookies are bound to look extremely pretty and cute, and taste absolutely delicious! The beautiful mix of molasses and brown sugar along with all these flavourful spices is what makes these cookies feel so Christmasy and homely!

This is what you need:

  • ⅓ cup of soft butter
  • ¼ cup of brown sugar
  • ⅓ cup of dark molasses
  • 1 large egg
  • ½ tsp of baking soda
  • 1¾ cup of flour
  • ¾ tsp of cinnamon powder
  • ½ tsp of ground allspice
  • ¾ tsp of ginger powder
  • ½ tsp of ground cloves
  • ½ tsp of nutmeg

Note: You can substitute 1 cup of molasses with one of the following:

  • 1 cup dark corn syrup; or
  • 1 cup of honey; or
  • 1 cup of maple syrup;
  • or a combination of ¾ cup firmly packed brown sugar, ¾ cup of brown granulated sugar, and ¼ cup of water

How to make it:

  • In a big bowl, add in the butter and sugar. Start by beating them till they are light and well mixed.
  • To this mixture, add in all the spices along with the molasses and mix the batter till fully combined.
  • Now add in half of the flour and baking powder to this mixture along with the egg.
  • Mix this mixture well and then add rest of the flour.
  • Mix again and start kneading this mixture together till it comes into a dough.
  • Tightly wrap this dough in a cling film and chill in the fridge for ½ to 1 hour.
  • Now, roll this out flat to about half an inch thickness.
  • Cut out shapes from this. You can cut into any shapes you want. I decided to use my gingerbread man cookie cutter among several others. Bake for 12 to 15 minutes at 170º C.
  • Finally, your gingerbread cookies are ready! You can decorate it with some royal icing or just like me, use some melted white chocolate along with other colored decorations.
