Christmas Fruit Cake | Rum Cake

There is nothing that says Christmas like this traditional Christmas Fruit Cake! It is one of the staples in anyone’s list who is planning to do Christmas baking. You can make it with alcohol or without (click here to read about substitutes for alcohol), the cake is as customizable as you want it to be! Packed full of fruits and nuts, your kitchen will ‘smell like Christmas’ when you bake it.

Here’s what you need:
  • 180 gm of butter
  • 225 gm of flour
  • 200 to 225 gm of sugar
  • 4 eggs
  • Soaked fruits (click to read the recipe)
  • 1 tsp of powdered cloves
  • 1 tsp of ginger powder
  • ½ tsp of cinnamon powder
  • ¾ tsp of nutmeg powder

Note: You can use white sugar instead of brown sugar. However, brown sugar adds a much better taste and colour to this cake.

How to make it:
  • The first step is to preheat your oven to 130º C.
  • Take a big bowl and add in the butter and brown sugar. With the help of an electric beater or whisk, beat them together till they cream into a fluffy, light mixture.
  • Add in the eggs, one at a time, and make sure to beat it with the mixture well after every addition.
  • Sift in the flour along with all the spices. Mix well with a spoon till it comes together into a thick batter.

  • Take an 8-inch pan and grease it with some butter or oil. Line it well and then pour in your batter.
  • Now create a bed of at least 2 to 3 layers of newspapers and put the tin over that. Make sure that the newspaper covers the tin from all sides. Since this cake has to be baked for a good amount of time, doing this will make sure that the cake doesn’t burn from the sides.
  • Bake it in the oven for 2 to 2½ hours or till a skewer inserted in the middle comes out clean.
