Crunchy Oat-Raisin-Walnut Drop Cookies (Eggless)

“Life is Better With Freshly-Baked Cookies.”

Few things beat the joy I get when I see the look of excitement on my kids’ faces on finding freshly baked cookies awaiting them as they enter the house after a long day at school. I have so many quick and easy cookie recipes that I am easily able to offer them a new one every time!! One of them is the Crunchy Oat-Raisin-Walnut Drop Cookies recipe.

 

 

As it is obvious from the name, these cookies come with the wholesome goodness of nuts and whole oats.

Variations:

  1. You could replace the oats with unsweetened desiccated coconut to get amazing Coconut-Raisin-Walnut cookies.
  2. You could replace half of the oats with unsweetened desiccated coconut.

What You Will Need:

Brown sugar – 100 gm

Sugar 80 – gms

Butter – 110 gms

Vanilla – 1.5 tsp

Flour – 200 gms

High fibre oats – 1 cup (I try to use high fiber thick oats)

Milk 30-40 ml

Walnuts – 1/2 cup (broken)

Giant golden raisins – 1/2 cup (or any raisins, I used giant golden)   

How To Make It:

Grease and line a baking tray with parchment paper and preheat the oven to 180 C.

Cream the butter and sugars. Make sure your butter is at room temperature.

You should get a smooth creamy mixture like this below.

Add half of the flour.  Add the raisins and walnuts and give a mix with a spoon or spatula.

The mixture may start to feel a little dry at this point. So add in the milk and mix nicely.

Add in the rest of the flour and mix into a uniform batter.

Finally add in the oats. I would suggest adding them whole.

Now your cookie batter is ready to be baked.

So scoop our portions of your liking and place the on the baking tray and bake for 20-25 minutes. Take them out when the sides become golden and you notice the raisins getting dark.

Take them off the tray immediately and place them on a wire rack to cool (yes they will be SUPER hot, so you have been warned!) But you need to do this otherwise your cookies will get soggy from the bottom.

At this point, the cookies will be quite delicate. But once they are completely cooled, they will be firmer. Having said that, remember that these cookies are meant to be soft. Enjoy them with a glass of milk, your tea or coffee. They are great as a quick snack to pack up for a day out or a drive.
