Orange and Chocolate Upside Down Cake

Orange and Chocolate is a Match Made In Heaven

What do you do when those juicy bright-orangey oranges are in season and you see them all around the market. Yes they do make my mouth water and I want to make the most of the fresh flavor of the season!

This is one of my favorite flavor combinations and I think is absolutely lip-smacking!

So lets start right away!!

Recipe:

What you’ll need

Oranges: 2

Butter – 100 gms

Eggs – 2

Brown Sugar (for Caramel) – 100 gms

Cocoa Powder – 60 gms

Flour – 100 gms

Baking Powder – 1 tsp

Brown/Castor Sugar – 100 gms

Orange Zest – From 1-2 oranges depending on your taste

Orange Juice –  From 1 orange

Milk – 20-30 mls

Method

Preheat oven to 180 degrees C.

Sift the flour, baking powder and cocoa powder together.

Zest 1-2 oranges (depending on the boldness of flavor you like)

Add the zest to the milk.

Squeeze 1 orange for fresh juice.

Slice 2 oranges as shown here. I have left the outer peels on. This could make your cake taste a little bitter (too bitter for some). You could take the peels off if you want.

For the Caramel:

In a big thick bottomed pan, melt the sugar and let it carmelize.

Pour this caramel into the baking tin and arrange the orange slices on top of it as shown below.

Cream the butter and sugar well.

Add in the eggs one at a time beating after each addition. Fold in the flour and cocoa mixture.

Mix in the milk and zest mixture, and the orange juice.

Pour this batter into the baking tin lined with orange slices.

Bake this for about 40 minutes or till done.

Let the cake cool before turning it out.

No prizes for guessing that you need to serve it Upside Down!!

Eat it as is or with a quinelle of whipped cream.

Important Note: If kept over a day, this cake does tend to get a bit bitter from the Orange slices so here’s what you can do. Either remove the peel and pith before slicing (I personally DONT prefer this) or try and finish the cake in a day or 2.
