My favorite Coconut Cake is really one of my top favorites. The best part is that its so super simple to put together – its a one-bowl wonder!! And you wont believe how soft and light these cupcakes turn out. They actually melt in your mouth!!!
Now you can use this this recipe to make cupcakes or a cake. It gives you about 14-16 good-sized cupcakes or a 10 inch round cake.
What you will need:
Flour – 250 gms
Baking powder – 1/2 tsp
Desiccated coconut- 100 gms
Ground almonds – 50 gms
Butter – 150 gms
Vanilla – 1 tsp
Milk- 150 mls
Eggs – 2
Sugar -200 gms
How To Make It:
Preheat the oven to 180 C.
Grease and line cupcake tray with paper liners. (If you’re making cake, use a 10 inch cake tin)
In a large bowl, mix together sifted flour, baking powder, ground almond, coconut and sugar.
Add in the butter, vanilla, milk, and eggs and mix with a whisk till you get a smooth batter.
Pour the batter into the cupcake liners and bake for about 15-20 minutes. If you’re making cake, bake it for about 35-45 minutes.
