My Favorite Coconut Cupcakes

Coconut Cake is really one of my top favorites. The best part is that it’s so super simple to put together – its a one-bowl wonder! And you wont believe how soft and light these cupcakes turn out. They actually melt in your mouth!

Now you can use this recipe to make cupcakes or a cake. It gives you about 14-16 good-sized cupcakes or a 10 inch round cake.

What you will need:

Flour – 250 gms

Baking powder – 1/2 tsp

Desiccated coconut- 100 gms

Ground almonds – 50 gms

Butter – 150 gms

Vanilla – 1 tsp

Milk- 150 ml

Eggs – 2

Sugar -200 gms

How To Make It:

Preheat the oven to 180 C.

Grease and line cupcake tray with paper liners. (If you’re making a cake, use a 10-inch cake tin)

In a large bowl, mix together sifted flour, baking powder, ground almond, coconut, and sugar.

Add in the butter, vanilla, milk, and eggs and mix with a whisk till you get a smooth batter.

Pour the batter into the cupcake liners and bake for about 15-20 minutes. If you’re making a cake, bake it for about 35-45 minutes.
